    Heat a frying pan with a coating of vegetable oil over medium-high heat.

    Toast the corn until it caramelizes around the edges.

    Add diced onion and sauté in oil, seasoning with chili powder.

    Add rinsed black beans and mix together with corn and onion.

  5. 5

    Squeeze lime juice over the mixture and set aside.

    In the same frying pan, warm the tortillas until very pliable.

    On a tray, spread corn mixture onto one tortilla, add cheese and jalapeños.

    Cover with a second tortilla and return to the hot frying pan.

    Heat on both sides until tortillas are slightly browned and cheese is melted inside.

💡 Cook's Notes

The corn can be frozen or fresh sliced off the cob (microwave fresh corn 4 minutes per ear before slicing).
