Filling

    Cream the cream cheese and havarti together in a food processor.

    Add the powdered sugar, vanilla, nutmeg, and melted chocolate. Mix well.

    Mix in the nuts and liqueur to taste.

    Fold in the Cool Whip gently.

    Chill until shortly before serving (so the shells won't get soggy).

    Stuff into shells and dust with powdered sugar before serving.

Homemade Waffle Shells

    Heat waffle iron to setting #3 (with the "3" barely showing on the dial).

    Beat eggs, vanilla, cinnamon, nutmeg, and salt in a small bowl with a fork until well blended.

    Beat in the sugar and continue beating for about 1 minute.

    Add flour and stir slowly until all flour is moistened, then beat for 15 seconds to remove lumps.

    Add melted butter and stir well.

    Use about 1/4 cup of batter per shell on the waffle iron.

    Cook 2 minutes each, until slightly browned.

    Remove carefully with an oven mitt and immediately form into a cannoli shell around a tube, make a cone, or press into a small bowl. Hardens quickly.

This is the richest cannoli filling recipe. Alternative ricotta-based fillings: **Classic Ricotta Filling:** 3 cups ricotta, 1 1/4 cups sugar, 2 tsp vanilla, 1/4 cup chocolate chips. **Citrus Ricotta Filling:** 3 cups ricotta, 1/2 cup confectioners' sugar, 1/4 tsp cinnamon, 1/2 square unsweetened chocolate (grated) or 1/2 Tbsp cocoa (optional), 1/2 tsp vanilla, 3 Tbsp citron peel (chopped), 2 Tbsp candied orange peel (chopped), 6 glacéd cherries (cut up).
