Tyler Florence uses a food processor to mix the filling, but some suggest this can make it too liquid if the ricotta isn't drained sufficiently. **Alternative method (traditional Sicilian approach):** Hand mix the filling to prevent it from becoming too liquid. Use equal parts mascarpone and ricotta, and half that amount in honey. Add spices (cinnamon, nutmeg, or cardamom) and zest. Chill 15-30 minutes, pipe into shells, optionally dip the ends in chocolate and dust with powdered sugar, then chill and serve. This method takes 15-30 minutes total.
