    Shave chocolate into small pieces and dust with a knife until desired quantity achieved.

    Place in measuring cup and add shortening.

    Place measuring cup in about 1 inch deep warm (not hot) water.

    Stir frequently with rubber spatula until smooth. Don't get water into chocolate.

    Remove from saucepan and let cool slightly.

    Pour onto back of baking pan (or pour into a glass baking dish) and quickly spread into thin layer, about 1/4 inch thick, with metal spatula.

    Let stand in cool, dry place until firm. Some say don't chill it; others say chill for 30 minutes or until firm.

    Use small straight-edge metal spatula to form curls, holding it at 45 degree angle, pushing firmly along baking pan.

    Lift shavings with a long toothpick or chopstick.

💡 Cook's Notes

**To store ahead of time:** Line a sealable storage container with paper towels or wax or parchment paper, and place pieces separately on towel. Seal and let sit at room temperature. If too warm in kitchen, refrigerate.
