  • Dumplings

Instructions

  1. 1

    Preheat oven to 425°F.

  2. 2

In a small saucepan, stir together the 3/4 cup sugar and cornstarch. Blend in the water and orange juice.

  3. 3

Cook and stir over medium heat until the mixture is thickened and bubbly.

  4. 4

Add the blackberries and bring the mixture back to boiling. Remove from heat and cover to keep warm.

  5. 5

    Prepare the dumplings:

  6. 6

Pour the warm blackberry mixture into a 2-quart casserole dish.

  7. 7

Quickly spoon the dumpling batter into 8 mounds on top of the warm blackberry mixture.

  8. 8

In a small dish, stir together the remaining 1 Tbsp sugar and cinnamon. Sprinkle over the dumplings.

  9. 9

Bake, uncovered, for 20 minutes, or until a toothpick inserted in the center of a dumpling comes out clean.

💡 Cook's Notes

Spoon the warm cobbler onto individual dessert plates and serve. For a Rhubarb variation, substitute 4 cups of rhubarb cut into 1-inch pieces for the blackberries, and proceed with the recipe.
