Classic Spanish cold soup made with fresh tomatoes, cucumbers, and peppers. Refreshing and healthy, this chilled soup is perfect for hot summer days.

Instructions

Puree vegetables
Puree the onions, garlic, bell pepper, and cucumbers in a food processor.

Add vinegar and bread
Add the vinegar and 1/4 cup lime juice and bread (for "body"), and process thoroughly.

Add tomatoes
Add the chopped tomatoes and juice and process until well combined.

Season
Season to taste with salt and pepper. Add remaining lime juice to taste.

Serve
Serve hot or chilled with garnishes added at the last minute. For "crunch" texture, top with celery bits and/or chopped onion, bell pepper, cucumber, sour cream, or plain yogurt.
Cook's Notes
Will last in refrigerator for a week or so. A good "do ahead" recipe that's perfect for meal prep.
