Instructions

    Preheat oven to 350°F.

    Grease and flour two 9-inch round cake pans. Set aside.

    In large bowl, stir together dry ingredients: flour, sugar, baking powder, and baking soda. Set aside.

    In medium bowl, beat eggs. Stir in carrot shavings, oil, dried fruit (if using), and ginger.

    Stir egg mixture into flour mixture to make cake batter. Pour into prepared pans.

    Bake for 30 to 35 minutes (toothpick test). Cool cake layers in pans for 10 minutes, then remove from pans and peel off paper. Cool completely on wire racks.

    Prepare the frosting:

    Fill and frost the cake. Decorate with pecan bits pressed into sides of cake.

    Cover loosely and store cake in refrigerator (including leftovers) for up to 2 days.
