Adjust oven rack to center position, place a cookie sheet on it, and preheat oven to 300°F.

Prepare the filling:

Return bowl to hot water and heat, stirring until mixture is shiny and warm to the touch (about 130°F).

Remove from heat and stir in the toasted pecans.

Pour mixture into warmed pie shell and cover top with Demerara sugar.

Place onto the cookie sheet in the oven and bake until center feels set yet soft, like gelatin, when gently pressed (50-60 minutes).

Transfer pie to a rack and let cool completely (at least 4 hours).

Serve at room temperature or rewarmed.
💡 Cook's Notes
**Avoiding a burn:** After the first 20-30 minutes, the pie crust should start looking somewhat browned. That's a good time to lay an aluminum foil crust ring on the pie to prevent further crust darkening while letting the pie continue to cook. If the top surface of the pie reaches an attractive level of browning, place a simple sheet of aluminum foil flat across the top of the pie (no tucking). This will shield some of the radiant heat to retard further browning, but still let the pie cook. **Toasting pecans:** Gently toast the pecans in a toaster oven before adding them to the pie custard to enrich overall flavor.
