Lemon Basil Pesto for Fish

Instructions
For the Pesto

In a blender or food processor, pulse the basil, pine nuts, lemon juice, garlic, lemon zest, 3/4 tsp salt, and 1/4 tsp pepper until finely chopped.

With the machine running, gradually add the oil until the mixture is smooth and thick.

Add the cheese and pulse until just incorporated.

Season with additional salt and pepper to taste. Set aside.
For Grilled Fish

Place a grill pan over medium-high heat or preheat a gas or charcoal grill.

Brush both sides of the fish fillets with olive oil and season with 1 tsp salt and 1/4 tsp pepper.

Place sliced lemon over fish as it grills.

Grill the fish about 3 to 4 minutes on each side for a 1-inch thick fillet.

Transfer the grilled fish to serving plates, top with the lemon pesto and lemon wedge, and serve.
💡 Cook's Notes
This pesto is versatile and works well with various types of white fish, especially swordfish, halibut, or mahi-mahi.
