💡 Cook's Notes

The butter can bubble and boil during baking, which can splatter onto oven racks and surfaces. To minimize this, place the pie on a cookie sheet to catch any runoff. Place in upper oven to let it rise more gently. If using a cookie sheet to catch runoff, remove it halfway through so the heat deflection won't slow the interior cooking. Variation: Another recipe calls for only 1/4 cup milk and 1/4 cup (half stick) butter, melted and cooled.
