    Wash, drain, and then peel, core and chop the pears to desired size. Weigh the prepared pears.

    Add equal amount of sugar, plus the clear juice of the lemon(s) and gently combine in a non-reactive container.

    Cover the container and let sit from 3 to 24 hours to drain juice from pears.

    When ready to cook, place contents into a heavy cooking pot over LOW heat.

    Gently bring syrup to simmer, stirring frequently but carefully, until fruit is tender and slightly pink in color, and syrup is beginning to get thick.

    Remove from heat when the pears first start to look pinkish around the edges.

    Pack fruit in hot sterilized jars.

💡 Cook's Notes

Amounts are only proportional. Any amount can be made using the 1:1 ratio of pears to sugar, plus one lemon per 2 lbs of sugar.
