    Prepare the Ramen noodles by slicing the "brick" with a knife into three sub-parts.

    Boil water and add noodles for 2 minutes, stirring to help them break apart. Drain and set aside.

    If using fresh corn, pre-cook in microwave for 4 minutes per ear, then clean and slice off kernels into a bowl. (Option: use frozen corn and/or peas)

    Heat electric frying pan with olive oil for sautéing vegetables.

    Add heavier vegetables (carrots, bell pepper, corn) to the pan first and cook until well heated and sizzling.

    Add snow peas, shallots, and sun-dried tomatoes.

    Stir in more delicate items: garlic, basil, and chives.

    Add seasonings and stir to combine.

    When all vegetables are well heated and cooked, stir in the cooked noodles and toasted almonds.

💡 Cook's Notes

Be careful not to over-salt due to the saltiness of the sun-dried tomatoes and seasoning packets.
