    Cream butter and sugar together.

    Beat eggs well and add to sugar mixture.

    Mix in buttermilk, baking soda, vanilla, and crushed bananas.

    Mix in the flour to form a dough.

    Add nuts.

    Add a little salt and nutmeg. Can also add cinnamon and/or top with shredded coconut.

    Grease and flour a loaf pan (optional).

    Pour batter into prepared pan.

    Bake at 350°F for 70 to 90 minutes (or 45 minutes for muffins).

💡 Cook's Notes

6 bananas makes for a very moist recipe. You can use fewer bananas for a faster cooking time, but the result will be less moist. For a double recipe: In two loaf pans: at least 90 minutes to cook In three loaf pans: may cook in 80 minutes
