Pasta Basilico by Luciano Pavarotti
Ingredients
Instructions
- 1
Cook the spaghetti according to package directions.
- 2
In a large pan, heat the olive oil over medium heat.
- 3
Add the garlic and sauté briefly to flavor the oil.
- 4
Add the tomatoes, parsley, basil, and lemon juice. Sauté lightly for about 1 minute—don't overcook or the tomatoes will become mushy.
- 5
Season with salt and pepper.
- 6
Toss the sauce with the freshly cooked spaghetti.
- 7
Immediately sprinkle with Parmesan cheese so the heat of the noodles causes it to melt.
- 8
Adjust salt and pepper to taste.
💡 Cook's Notes
Optional: Add a few lightly roasted pine nuts. Can substitute lime for lemon for a more tart taste. For wine, Pavarotti recommends Brunello di Montalcino. This pasta dish has a very fresh taste. Excellent with side dishes of vegetables and a hearty bread.
