Heat olive oil in a large cooking pot over medium heat.

Prepare the tomatoes:

Saute the onions and tomato paste in the hot oil for about 3 minutes, until fully sweated.

Add the minced garlic and pepper flakes; cook another 30 seconds to warm them up.

Add the tomatoes and salt, stirring to incorporate.

Remove from heat and add the vodka (off flame for safety), then return to heat.

Simmer for 10 minutes.

Meanwhile, cook the penne pasta for about 10 minutes (shy of al dente).

Stir the cream into the simmered sauce.

Drain the pasta and return it to the pot, then pour the sauce over it.

Continue to heat gently, allowing the pasta to finish cooking in the sauce.

Stir in the freshly chopped basil.

Plate and top with grated Parmesan cheese.
