    In a kettle of salted boiling water, cook pasta 4 minutes (or about 5 minutes less than package directions). Drain well and set aside.

    In a large skillet, melt butter over moderately high heat. Sauté mushrooms and prosciutto, stirring, for 2 minutes.

    Stir in pine nuts and garlic and cook, stirring, for 2 minutes.

    Add brandy and remove skillet from heat.

    Carefully ignite the brandy and return skillet to heat, shaking it until flames go out.

    Add cream, stirring until it begins to boil, then add the pasta.

    Simmer mixture until pasta is al dente, about 5 minutes.

    Stir in Parmesan, parsley, and salt and pepper to taste.
