Instructions
Basic Method

Beat egg white and lemon juice until it begins to stiffen or froth.

Slowly add sugar until fully incorporated.

Adjust sugar as needed to achieve perfect consistency.
Whole Foods Method

Combine all ingredients in a bowl.

Mix with a wooden spoon about 2 minutes until smooth.

Store up to 2 days in refrigerator.

Thin with drops of water if too thick to work with.
Flooding Technique

Using a #2 tip and slightly thicker icing, pipe a thin outline around the perimeter of the cookie to create a "dam."

Fill the interior with thinner "flood" consistency icing.
💡 Cook's Notes
This icing is designed to harden completely. May be flavored with cognac or a good liquor (Tuaca works well for thinning). Color with highly concentrated soft-gel food coloring (not liquid) - ChefMaster brand recommended. Use a dropper tip for better control. **Outlining:** Add 1/2 to 3/4 tsp water (should drop in slow globs) **Top-coating:** Add 1 1/2 to 2 1/2 tsp water **Flooding:** Add 2 1/2+ tsp water (surface should smooth over in 10 seconds; stir gently to prevent air bubbles)
