Stellino's Tomato Sauce ("Red Sauce")

Heat olive oil in a stock pot (at least 3 quart size) over medium-high heat.

Add the garlic and sizzle in the hot oil until it just starts to brown.

Add the basil and let it sizzle for a few seconds to release essential oils.

Toss in the chopped onion and red pepper flakes.

Cook over medium heat for 15 minutes, stirring often, until the onions are starting to soften and brown.

Add the blended tomatoes, salt, pepper, sugar (if using), and dry oregano.

Stir well and cook for 5 more minutes.

When it comes to a boil, reduce heat to simmer for 30-35 minutes, stirring occasionally to lift what is on the bottom next to the flame.

Let the sauce come to room temperature before storing.
💡 Cook's Notes
Optional: For a smoother, more elegant presentation, once the finished sauce is at room temperature, process it in batches in a food processor. The sauce will go through a slight change of color, but the flavor will not change. Store in the refrigerator up to 3 days or freeze for up to 1 month.
