Instructions

    Place cubed potatoes in a steamer basket and set over a large pot of simmering water, keeping the water at least 2 inches below the basket.

    Steam for 20 minutes or until potatoes are fork tender.

    Mash with a potato masher and set aside.

    Preheat oven to 350°F.

    Transfer sweet potatoes to a stand mixer and beat with the paddle attachment.

    Add yogurt, brown sugar, cinnamon, nutmeg, egg yolks, and salt to taste. Beat until well combined.

    Pour batter into the pie shell and place on a sheet pan.

    Sprinkle toasted pecans on top and drizzle with maple syrup.

    Bake for 50 to 55 minutes.

    Remove from oven and cool. Keep refrigerated after cooling.
