    Set speed control to VARIABLE, speed #1.

    Turn on machine for about 5 seconds, until tomatoes are just broken up.

    Press through coarse sieve or food mill.

Fresh Tomato Juice

    Quarter clean tomatoes and remove stem and core.

  2. 2

    Place tomatoes in the Vitamix container.

  3. 3

    Secure 2-part lid.

  4. 4

    Select VARIABLE, speed #1.

  5. 5

    Turn on machine and quickly increase speed to #10, then to HIGH.

  6. 6

    Run for 30 to 60 seconds, using the tamper to stir.

  7. 7

    Chill and serve.

Traditional Tomato Juice

    Follow Fresh Tomato Juice instructions above.

    Pour tomato juice into a saucepan and simmer over medium heat for 5 to 10 minutes, stirring occasionally.

    Salt to taste.

  4. 4

    Chill and serve.

Canned Tomato Juice

    Fill the Vitamix container with 6 to 8 cups clean tomato quarters (for each batch).

    Secure 2-part lid.

  3. 3

    Select VARIABLE, speed #1.

  4. 4

    Turn on machine and quickly increase speed to #10, then to HIGH.

    Run for 30 to 60 seconds, using the tamper to stir.

    In a large saucepan, bring juice to a boil, stirring occasionally.

  7. 7

    Salt to taste.

  8. 8

    Add 2 tablespoons lemon juice per quart of tomato juice.

    Freeze or can:

    Seal and process pints or quarts 35 minutes in a boiling-water bath.

💡 Cook's Notes

The basic recipe yields about 1¼ cups (300 mL) from 2-3 tomatoes. For canning, scale up using 6-8 cups of tomato quarters per batch.
