    Preheat oven to 350°F.

    Mix brown sugar, corn syrup, and butter together in a bowl.

    In a separate bowl, beat eggs and salt together until eggs are yellow.

    Pour eggs into the sugar mixture and blend well.

    Add flour, vanilla, nutmeg, and cinnamon and blend in.

    Fold in the pecans.

    Pour the completed mixture into unbaked, chilled pie shell.

    Sprinkle demerara sugar on top (about 1 Tbsp).

    Bake at 350°F for 10 minutes, then reduce temperature to 300°F and bake for 50-60 minutes.

💡 Cook's Notes

For two full pies, use 5 eggs, 2 cups brown sugar, 2 cups corn syrup, 2 cups pecans, and double the seasonings. Some recipes call for dark corn syrup and white sugar instead of the brown sugar and regular corn syrup. Some recipes call for cooking at 350°F for 25 to 40 minutes. Either alternative should work fine. Recommended corn syrup brand: KARO.
