    Preheat oven to 350°F. Prepare a bundt pan (or 13x9x3 baking pan) by spraying with cooking spray or lightly greasing with shortening, then flouring.

    With an electric mixer or hand whisk, combine in order: oil and sugar, then eggs, then cake mix (reserving 2 Tbsp for filling), then sour cream. Add coconut if using.

    Prepare the crumble filling: combine the reserved 2 Tbsp cake mix, brown sugar, cinnamon, and pecans.

    Pour half the cake batter into the prepared pan. Sprinkle the crumble filling evenly over the batter. Pour the remaining batter on top.

    Sprinkle any remaining crumble on top, then marbleize by pressing and zigzagging a knife through the batter once.

    Bake for 45-50 minutes at 350°F for bundt pan, or 1 hour at 300°F for baking pan. Test by sight and feel; don't rely on time alone.

    Let cool, then glaze with confectioners' sugar mixed with milk, or simply dust with powdered sugar.

💡 Cook's Notes

The salad oil must have no aroma when you smell it right after removing the cap. Fresh Crisco oil works well. For a slightly less rich cake, use 2/3 cup oil instead of 3/4 cup. This recipe was refined to match a similar recipe featured in D Magazine.
