Watercress Sauce

Sauté onion and garlic in olive oil.

Add thyme, lemon, wine, and broth. Let reduce over heat to concentrate flavors.

Stir in heavy cream and continue to reduce.

Strain the mixture into a food blender or processor.

Add the watercress tops and jalapeños to the blender and blend until well mixed, with little flecks of green still visible.

Season with pepper and salt to taste.

Serve over fish or seafood.

Garnish with bits of parsley.
