Crispy breaded eggplant fries made in the air fryer with Parmesan and wheat germ coating. Served with warm marinara sauce for dipping.

Preheat air fryer
Preheat air fryer to 400°F.

Prepare coating stations
In a shallow bowl, whisk eggs. In another shallow bowl, mix cheese, wheat germ and seasonings.

Cut eggplant
Trim ends of eggplant; cut eggplant lengthwise into 1/2-inch-thick slices. Cut slices lengthwise into 1/2-inch strips.

Coat eggplant
Dip eggplant in eggs, then coat with cheese mixture.

Prepare for cooking
Spritz eggplant and air fryer basket with cooking spray. Working in batches if needed, place eggplant in a single layer in air fryer basket.

First cook
Cook until golden brown, 5-7 minutes. Begin checking at the first time listed and adjust as needed based on your air fryer brand.

Flip and finish
Turn eggplant; spritz with additional cooking spray. Continue cooking until golden brown, 4-5 minutes.

Serve
Serve immediately with pasta dipping sauce.
