Preheat oven
Preheat oven to 450°F.

Mix dry ingredients
In a large bowl, whisk together flour, baking powder, and salt. Add a pinch of baking soda if desired for extra lift with the buttermilk.

Cut in fat
Cut in cold butter pieces (or add vegetable oil) until mixture resembles coarse crumbs.

Add buttermilk
Pour in buttermilk and stir just until dough comes together. Do not overmix.

Shape biscuits
Turn dough onto floured surface, pat to 3/4-inch thickness, and cut into rounds.

Brush with cream
Place biscuits on baking sheet and brush tops with heavy cream.
