    In a 4-quart saucepan, melt fat over medium heat.

    Add half of the onions, celery and bell peppers. Cook until onions are rich brown in color, about 20 minutes, stirring occasionally.

    Add ham, sausage and remaining vegetables. Continue cooking 5 minutes, stirring occasionally.

    Add tomatoes, tomato sauce, bay leaves, seasoning, garlic and Tabasco. Simmer 15 minutes, stirring occasionally.

    Turn heat to high. Fold in uncooked rice until well mixed.

    Add stock, cover pot and remove from heat to stand, covered, for 15 minutes.

    Return pan to medium heat and cook covered for 4 minutes to reheat.

    Remove from heat and let stand, covered, until rice is tender, about 10 minutes.

    Serve immediately.
