Instructions

    Cut the chicken breasts into nugget-sized pieces.

    Soak in brine liquid for 30 minutes, covered, in the refrigerator.

    Remove, drain, and pat dry.

  4. 4

    Heat oil to 350°F.

  5. 5

    Coat nuggets with egg white wash.

  6. 6

    Coat nuggets well with crumb mix, reserving unused mix.

    Let them rest for 10 minutes, then re-coat with remaining mix to double coat.

    Cook a portion of nuggets in 350°F oil for 2-3 minutes per batch until browned.

    Place cooked batch on oven tray and keep warm in 200°F oven until all are done.

    When all batches are complete, serve with honey mustard dipping sauce.
