Prepare the marinade by mixing olive oil, lime juice, garlic, brown sugar, and soy sauce in a bowl.

Add sliced chicken to the marinade and refrigerate for 2-4 hours.

Make the peanut sauce ahead of time:

Transfer peanut sauce mixture to a saucepan and bring to a boil.

Reduce heat to medium-low and simmer for about 30 minutes to reduce liquid content.

Let sauce cool, then thin with yogurt to desired consistency.

If using wooden skewers, soak them in water beforehand.

Thread marinated chicken strips onto skewers.

Grill chicken for about 5 minutes per side (10 minutes total).
