Chicken Vindaloo Curry

Heat cooking oil in a medium pot over medium heat.

Sauté onion until fairly well browned.

Add garlic and heat well, but do not brown the garlic.

Add curry powder and stir to combine.

Add 1/2 cup water and stir to make a sauce.

Add meat cubes and salt, stirring to coat.

When meat is seared, add remaining 1 cup of water.

Cover and cook for 30 minutes over low heat, stirring occasionally.

Add tomatoes and cook another 10 minutes.

Add coconut milk, yogurt, or sour cream. Mix in and simmer for 5-7 minutes.

Serve over rice or noodles.

Meat options: Chicken, pork, beef, or lamb all work well Alternative method: Some recipes call for marinating the meat in the curry sauce for 30 minutes before cooking
