    Melt the butter and oil together in a large pan.

    Add the onions and bacon and fry until the onions are soft and translucent and the bacon has rendered its fat.

    Add the garlic and sauté for another 30 seconds, then remove the entire mixture from the pan, leaving the fat behind.

    Season the chicken with salt and pepper and place in the pan, skin side down. Brown all over.

    Add the mushrooms and fry for 5 minutes.

    Return the onion and bacon mixture to the pan.

    Pour in the wine and bring to a boil. Turn down the heat, cover, and simmer for 15 minutes.

    After 15 minutes, uncover and turn up the heat. Add the cream and cook for another 5 minutes.

    Stir in the chopped parsley and season to taste.

    Serve with rice, pasta, or crusty bread.
