Cream of Carrot Soup

In a 3-quart saucepan, combine the broth, carrots, celery, and onion. Bring to a boil.

Reduce heat, cover, and simmer for 20 minutes.

Transfer mixture to a blender or food processor. Blend briefly.

Add cottage cheese and blend for several minutes until completely smooth.

Transfer mixture to a serving bowl and stir in the milk, salt, and pepper.

Either reheat in microwave to serve warm, or chill in the refrigerator to serve cold.
Yogurt Garnish

Stir the yogurt until smooth.

Draw yogurt into a turkey baster.

Make several straight lines across the surface of the soup.

Drag a knife perpendicularly through the lines at intervals, alternating directions to create a feathered pattern.

Add a small dot of yogurt where a bird's head would be to complete the swan design.
