Dover Sole

Cut off fins of fish.

Peel off all skin:

Wet surface of fish with milk, top and bottom, so flour will stick.

Salt and pepper both sides.

Spread flour in a pan and dredge fish fillets in it. Shake off excess.

Rack fillets for 10 minutes to dry.

Clarify the butter and put in pan. Bring up to medium heat.

When sizzling, place fish in pan (bottom skin up, if skin still on).

Check to prevent sticking to bottom.

Cook 3 minutes total on first side.

Flip and cook 3 more minutes on other side.

When everything is cooked, feel free to make a pan sauce to pour over sole.
