Instructions

    Preheat oven to 350°F.

    Season the flour with salt and pepper.

    Lightly dredge Dover sole in the seasoned flour.

    Heat 1 1/2 oz olive oil in a medium pan until it begins to smoke.

    Saute sole until golden brown on each side, about 1-2 minutes per side.

    Transfer to oven and finish for 4 minutes.

    Debone the sole.

    For the sauce: Add 2 oz whole butter to a small fry pan and heat until the butter turns brown.

    Add white wine, lemon juice, parsley, salt, and pepper to the butter.

    Pour sauce over the sole and serve.
