Instructions

Preheat oven to 350°F.

In a small saucepan, melt jelly with vinegar over moderate heat, stirring.

Place pork in a roasting pan and brush all over with the jelly mixture.

Cover pork with foil and roast for 1 hour.

Remove foil and brush pork with pan juices.

Reduce heat to 325°F and roast pork, uncovered, for 15 more minutes.

Let pork stand (rest) for 15 minutes before serving.

Serve with mustard sauce.
💡 Cook's Notes
**Mustard Sauce:** Whisk together mustard, sugar, and white wine vinegar in a bowl until sugar is dissolved. Whisk in the oil until emulsified. Whisk in water to thin to desired consistency. May be made and refrigerated one day ahead of time, but serve at room temperature.
