Ham & Butternut Squash Spaghetti

Cook spaghetti according to package directions. Drain and set aside.

In a large stainless steel skillet, heat olive oil over medium heat. Add ham slices (Black Forest smoked ham or bacon works well) and cook for 3-4 minutes.

Add garlic slices and cook for 3 minutes.

Pour in chicken broth and bring to a simmer.

Add butternut squash, salt, and chili flakes. Stir to coat. Cover with lid and cook over medium heat until squash is tender, about 15 minutes.

Remove from heat or reduce to low. Add generous black pepper and mascarpone cheese, stirring to incorporate the cream.

Stir in parsley or sage. Cover until pasta is ready.

Transfer the cooked pasta to the pasta pot and gently mix with the sauce.

Garnish with Parmesan cheese and additional parsley. Add more hot pepper if desired.
💡 Cook's Notes
Option: Add a squeeze of fresh lemon for brightness.
