    Prepare outdoor grill for direct medium-hot grilling:

    Whisk together vinegar, 1 tsp salt, and red pepper flakes in a large bowl.

    Whisk in oil, then add basil, oregano, and garlic.

    Add pork cubes and toss to coat.

    Spread zucchini and bell peppers on top of pork, season with remaining ½ tsp salt, and let stand 5 minutes.

    Stir to coat vegetables with marinade. Do not marinate longer than 15 minutes total.

    Thread pork, zucchini, and bell peppers onto 6 metal kabob skewers, alternating ingredients.

    Lightly oil cooking grate and place kabobs on grill. Cover grill.

    Cook, turning occasionally, for about 10-12 minutes or until pork is browned.

💡 Cook's Notes

Loin roast is sometimes confused with tenderloin. Despite the name similarity, they are not one in the same. A loin roast is typically sold in pieces weighing between 2 to 4 pounds (the tenderloin is a smaller, long cut that usually weighs about a pound). The term roast simply refers to a large cut of pork.
