    Cook rice according to package directions and keep warm.

    Place a large, deep skillet over medium-high heat. Add oil and butter to the pan.

    Cube chicken and place in hot oil and butter. Brown chicken for 3 minutes.

    Add sausage and cook 2 minutes more.

    Add onions, celery, bell peppers, bay leaves, and cayenne. Sauté vegetables for 5 minutes.

    Sprinkle flour (or roux) over the pan and cook 1-2 minutes more.

    Stir in tomatoes and broth. Season with cumin, chili powder, poultry seasoning, and Worcestershire sauce.

    Bring liquids to a boil and add shrimp.

    Simmer shrimp for 5 minutes until pink and firm.

    Remove the pot from heat and place on a trivet.

    To serve: Ladle jambalaya into shallow bowls. Using an ice cream scoop, place a scoop of rice in the center of each bowl.

    Top with salt, pepper, chopped scallions, and fresh thyme leaves.
