    Cut the round steak and chuck steak into cubes.

    Heat oil in a large pot and sear the meat until no longer pink.

    Transfer meat to a 2-quart pot.

    Add beer, water, chili peppers, Rotel tomatoes, onion, garlic, oregano, salt, cumin, and paprika.

    Cover tightly and simmer for 1 hour, stirring occasionally.

    Add cayenne pepper to taste and additional cumin if desired.

    Continue simmering for another hour.
