Prepare the potatoes (if making from scratch):

In a large bowl, mash together the potatoes and shredded fish.

Add in the seasonings (black pepper, Cajun seasoning, paprika, and Parmesan), then mix in the egg and panko. Mix well.

Form into small patties, approximately 2-3 inches in diameter.

Cover and refrigerate for 30 minutes or all day.

Heat 1/4 cup oil in a large skillet (preferably cast iron) over medium heat.

Test the oil by dropping a small crumb from your patties - if it sizzles, you're ready to fry.

Pan-fry the patties in batches of 3-4, cooking 2-3 minutes on each side until golden brown. Don't overcrowd the pan.

Serve hot and enjoy!
💡 Cook's Notes
These look a lot like crab cakes and look wonderful when cooked in a cast iron skillet. You can prepare the patties in the morning and refrigerate them all day so dinner prep is easier.
