    Make a thin marinade with the cider vinegar, chili spices, and sugar.

    Pour marinade over chicken pieces and refrigerate for 2 hours to overnight. The tart vinegar taste will predominate.

    Prepare a covered grill with low to moderate heat. Keep coals to one side, or place foil underneath chicken pieces to deflect heat and prevent dripping fat from flaring up.

    Cook chicken for about 45 minutes, not placing it directly over coals.

    Baste every ten minutes with more of the marinade.

    Meanwhile, make the final glaze by combining molasses, honey, vinegar, spices of choice, salt, and pepper. The sweetness will predominate this time.

    Brush glaze on the cooking chicken for the last ten minutes of cooking, being careful not to burn the glaze over the flame.
