    Place pasta, tomatoes, onion, garlic, and basil in a large stock pot.

    Pour in vegetable broth.

    Sprinkle red pepper flakes and oregano on top.

    Drizzle with olive oil.

    Cover pot and bring to a boil.

    Reduce to a low simmer and keep covered.

    Cook for about 10 minutes, stirring every 2 minutes or so.

    Cook until almost all liquid has evaporated (about an inch of liquid remaining in the bottom of the pot, or reduce as desired).

    Season to taste with salt and pepper, stirring pasta several times to distribute the liquid.

    Serve garnished with Parmesan cheese.

💡 Cook's Notes

The starch leaches out of the uncooked pasta as it cooks and creates a rich, creamy sauce. No straining required - just stirring. All ingredients cook together in one pot. Recipe sent by Dwight Garris.
