Rauhman's Gumbo

Cut chicken into 8 to 10 pieces if not already cut up.

In large sauce pan, melt some margarine or butter and sauté vegetables until tender. Remove and set aside.

Brown sausage thoroughly in skillet.

In large stew pot, bring 1 quart of water to boil. Dissolve 4 heaping tablespoons of roux until well dispersed in water.

Add veggies, garlic, and chicken to roux liquid.

Cook for 30 to 45 minutes, checking consistency:

Season to taste with Chachere seasoning, oregano, bay leaf, thyme, dash of cayenne pepper, and salt. Be careful not to over salt, as sausages can carry strong salt flavor by themselves.
