Easiest Sauteed Fish Fillets Ever

Thaw fillets (in warm water if necessary).

Mix flour, salt, and pepper in a bowl for dredging.

Melt butter in a skillet large enough for all fillets; add some extra virgin olive oil.

Dredge each fillet through flour mixture to coat each side lightly. Place each one carefully into simmering butter and oil.

Cook about 3 minutes per side. Remove to a drip rack.

With heat still under the skillet, add toasted almonds, wine, lemon juice and zest, capers, and basil. Continue to simmer the mixture until it reduces nicely.

Plate the fillets and cover with almond-lemon sauce.

This recipe took just minutes to prepare and was excellent. The almond-lemon sauce complements the delicate fish perfectly.
