    Toss shrimp with blackening seasoning and set aside.

    Heat oil in large skillet or wok over medium-high to high heat.

    Saute the carrots, corn, and peas.

    Add shrimp and saute until done.

    Add egg (and more oil, if needed) and cook to soft scramble.

    Add rice and soy sauce. Season with ginger.
