    Preheat oven to 375°F.

    Prepare the tomatoes:

    In a skillet over medium heat, sauté broccoli, onion, and garlic in 1 Tbsp olive oil until onion is tender, stirring often.

    Add shrimp, orzo, pine nuts, basil, and 2 Tbsp of the Parmesan cheese. Blend well and remove from heat.

    Spoon mixture into prepared tomatoes.

    Arrange stuffed tomatoes in a shallow baking dish.

    Sprinkle with remaining olive oil and Parmesan cheese.

    Bake for 20 to 30 minutes until tops are golden.
