    Toss cleaned shrimp in Cajun seasoning and cracked pepper. Set aside until ready to cook.

    Heat skillet and coat bottom with olive oil. Sauté shrimp until about half cooked.

    Add the wine, lemon juice, and Worcestershire sauce. Let reduce for several minutes while shrimp complete cooking (until firm but soft to the touch with spatula).

    Remove the shrimp from the boiling liquid, allowing liquid to continue reducing to a light syrup consistency.

    Drop several chunks of butter into skillet to melt and thicken the reduced sauce. Use as much or as little butter as desired depending on richness preference.

    Taste the sauce and adjust seasonings if needed.

💡 Cook's Notes

Shrimp size is 16-20 per pound for this recipe, giving each guest 4 fairly good sized shrimp. More and larger shrimp works fine too.
