Place shrimp in a container and coat with olive oil, herbs (tarragon, thyme, cayenne, oregano, coriander), and salt.

Refrigerate and let marinate for a while.

Sauté shrimp in a frying pan until just cooked through—don't overcook.

Set shrimp aside in a warm oven to rest.

Heat olive oil in the frying pan over medium heat.

Add spinach and crushed fresh garlic.

Flip and turn spinach until wilted and darkened.

Arrange sautéed spinach on a serving plate and top with the shrimp.
