    Drain and rinse all beans.

    Heat oil in a large heavy-bottomed nonreactive Dutch oven over medium heat until shimmering but not smoking, 3 to 4 minutes.

    Add onions, bell pepper, and garlic; sauté until vegetables are softened, about 10 minutes.

    Add chili powder, cumin, coriander, pepper flakes, oregano, cayenne, nutmeg, and black pepper. Continue to cook, stirring occasionally, until spices are heated and bound to vegetables.

    Increase heat to medium-high and add smoked turkey meat. Combine well.

    Add beans, diced tomatoes, crushed tomatoes, chicken broth, and 1 tsp salt. Bring to a boil.

    Reduce heat to low and simmer, uncovered, stirring occasionally, for 1 hour (or transfer to a slow cooker and cook for 4 to 6 hours).

    Continue to simmer until chili is dark and slightly thickened. Adjust seasoning with additional salt to taste.

💡 Cook's Notes

Serve over white rice with lime wedges, shredded sharp cheddar cheese, and sour cream. Sprinkle fresh chopped onion bits on top as garnish.
