Tuscan Chickpea and Tomato Soup

Place the chicken stock, half of the tomatoes (with juice), half of the chickpeas, onions, garlic, lemon juice, salt, and pepper in the Vitamix container in the order listed.

Secure the 2-part lid.

Select Variable speed #1, turn machine on, and quickly increase speed to #10, then to High.

Allow machine to run for 6-7 minutes until soup is hot.

Reduce to Variable speed #4 or #5.

Add the reserved tomatoes, chickpeas, basil, parsley, and olive oil.

Blend for an additional 10 seconds to incorporate while maintaining some texture.
💡 Cook's Notes
This is a Vitamix recipe that uses the blender's friction heat to warm the soup. The reserved ingredients added at the end provide texture contrast to the smooth base.
