Veal Scallopini with Spinach

    Between sheets of waxed paper, pound veal into 1/4-inch thick slices.

    Beat egg with House Seasoning in a shallow dish.

    Dip veal in egg mixture, then coat with crushed Ritz cracker crumbs.

    Heat oil in a large skillet over medium heat.

    Saute veal for about 2 minutes on each side.

    Pour wine into pan and cook for another 1-2 minutes.

    Remove veal from pan and set aside.

    Add chopped onion and spinach to the pan and saute until spinach is just wilted, 2-3 minutes (don't overcook).

    Add cream if using, and continue to saute for 1 more minute until hot.

    Season with salt and pepper.

    Pour spinach mixture onto a platter and arrange veal on top.

    Garnish as desired and serve.

💡 Cook's Notes

For a lighter version, omit the heavy cream. House Seasoning makes a large batch - store extra in an airtight container for future use.
